At Remedy, breakfast is hands down our favorite meal of the day. Why? Because we LOVE eggs. Both delicious and nutritious, eggs provide “eggcellent” (sorry, we had to!) amounts of vitamins, minerals, protein, and healthy fats. Eating the whole egg, yolk included, is best as most of the nutrition comes from the yolk. Check out our infographic below for details on the health benefits of whole eggs.

Health Benefits of Eggs

Paired with a side of bacon and a cup of coffee, there’s no other way we’d rather kick off the morning than with a couple of fresh pasture-raised eggs. Here are five more of our favorite ways to prepare eggs:

  1. Make a breakfast skillet with spinach, mushrooms, cabbage, bacon, or other ingredients of choice, and add a fried egg on top.
  2. Chop hard-boiled eggs, celery, and pickles, and add a dressing of avocado oil-based mayo, mustard, salt, and pepper.
  3. Crack an egg into the center of an avocado half, sprinkle with salt, pepper, and paprika, and bake in the oven.
  4. Make a stir fry with cauliflower rice and veggies, add a six-minute egg.
  5. Wrap asparagus in prosciutto and grill. Add a fried egg on top when finished.

Keeping the yolk intact (instead of scrambling) helps preserve the healthy fats in the yolk! Check out this short video from Dr. Nicole that explains why.
